Step cooking
Prepare the pepper
- Bulgarian pepper in an amount of 3 kg is thoroughly washed with running water, then we remove the seeds and stalks. We cut the vegetable into medium sized slices and put it in a large basin.
- Pour the chopped product with boiling water so that the pepper is slightly covered with liquid.
- We cover the bowl with the contents of a suitable lid and leave the pepper in this form for 10-15 minutes, so that the vegetable becomes more plastic, softer and it is easy to put it in jars.
Cook marinade
- Pour 2 liters of bottled water into the pan and send it to the stove.
- Add 400 g of granulated sugar, 40 g of salt, 10 peas of black pepper and 6 buds of cloves.
- We bring the liquid to a boil, periodically stirring it, so that the crystals of dry components dissolve faster.
- From the moment of boiling, boil the marinade for 2-3 minutes and remove from heat.
Canned pepper
- Stack pepper thoroughly in pre-sterilized jars, filling them to the very neck. One of the simple and quick ways to sterilize cans: wash the cans thoroughly, then send them to a cold oven and set the temperature to 120-130 ° С. As soon as the oven warms up to the set temperature, hold the jars for another 5-7 minutes, and then take them out, and we can fill them with preservation. Lids, as a rule, are enough to pour cool boiling water and leave in this form for 5-7 minutes.
- In each jar, add vegetable oil and table vinegar, based on the calculation for a liter jar: 20 ml of vegetable oil and 40 ml of table vinegar.
- Then pour pepper with hot marinade, filling the jars to the very top.
- Hermetically sealed cans with screw or conventional lids.
- Roll up the jars immediately upside down and wrap them in a warm blanket. We leave the preservation in this form until completely cooled, and then transfer it to a cool place for storage.
